Drusilla's Black French-Manicured Ladyfingers
20 min prep plus cooling
8 min baking
3 large eggs, separated
1 tsp vanilla extract
1/2 tsp almond extract
1/2 cup granulated sugar
1/8 tsp salt
3/4 cup sifted cake flour
Garnish: confectioners sugar, chocolate fondue
Preheat oven to 350, grease 2 ladyfinger pans or 2 baking sheets. Have
a nervous breakdown.
Mix together egg yolks, vanilla & almond extracts, and salt. Beat at
high speed until fluffy
Using clean beaters, beat egg whites until soft peaks form. Gradually
beat in sugar until stiff, but not dry, peaks form.
Fold flour into egg yolk mixture. Drop bowl because you are having a
psychic vision. Vision over- clean up and start over again.
Fold one-quarter of beaten egg whites into batter Fold in remaining
whites
Using pastry bag with a fluted tip pipe batter into prepared pans. ( I cheated & used one made for frosting - it worked fine) Or using a tbsp,
drop batter onto baking sheets, 2" apart. Spread batter into 4 one inch
strips. Wonder why Spike isn't back from hunting yet.
Bake until golden (8 min)
Cool completely, then dust with confectioners sugar
Dip all but the tip in fresh hot fondue & allow to cool before serving.
Have a tea party with dollies.
