Willow's Mini Pizza

45 min prep (plus 2hr rising & cooling)
8-12 min bake
Makes 16 party Pizzas

Crust:
1 package active dry yeast
? tspn granulated sugar
1 cup warm water
2 tbsp olive oil
? tspn salt
2-2? cups all purpose flour

Toppings:
3 tbsp olive oil
1lb fresh mushrooms (trimmed, cleaned, thinly sliced)
3 cloves garlic - chopped
1/3 cup chopped fresh parsley
2 tbsp chopped fresh rosemary (the dried kind works, too)
? tspn salt
1/8 tspn black pepper
? cup grated Parmesan cheese

Garnish:
1 small red bell pepper (seeded and cut into heart shapes) sprigs of fresh rosemary

Instructions:
In medium bowl, dissolve yeast and sugar in warm water. Let stand until foamy (5-10 min). Check your e-mail.

Stir oil and salt into yeast mixture

Using a heavy duty electric mixer fitted with a paddle, beat in flour 1 cup at a time (use a low setting) until dough forms. Answer cordless phone. It's Oz.

Knead dough until smooth and elastic - use flour to prevent sticking.  Place dough in a large greased bowl, turning to coat. Cover loosely   with a damp cloth & let rise in a warm place until doubled (about 1 hour).   Make plans for how to handle Oz's next werewolf morphing for the full moon tomorrow night.

Punch down dough. Cover again & let rise in a warm place until doubled (about 1 hour). Tell Oz to come over. Hang up. Get on computer. 

Break through three levels of FBI security access codes. Go back into kitchen.

In a large skillet, prepare topping by heating oil over medium heat.
Add mushrooms & onion; cook until softened. (8-10 min). Add garlic; cook for 1 min. Sit in parsley, rosemary, salt, and pepper. Remove from heat.

Preheat oven to 475 & grease 2 baking sheets.

Punch down dough. On a floured surface roll dough into a fat rope. Cut into 16 equal pieces & shape them into 3 ? inch rounds. Place rounds 2" apart on baking sheets. Spoon mushroom mixture evenly over rounds & sprinkle with Parmesan.

Bake pizzas until golden (8-12 min). Cool & then add garnish with pepper and rosemary sprigs.
